Massaman Curry Chicken

Flavour: Sweet and salty, very subtly tangy

Massaman curry is a southern Thai dish with influences of Malay and Indian cooking. In the old days, Massaman’s recipe originally had a dominant salty taste. In a modern day classic however this saltiness has been toned down and has become more balanced with sweetness. Some Thai chefs may also introduce a subtle tangy flavour by adding tamarind paste. Among Thai curries, Massaman is unique for its use of peanuts and several spices which are not customarily found in the other curries.
