Green Curry Chicken

Flavour: Salty-spicy with a scent of basil

Green curry is a dish from the central region of Thailand that originated in the early 1900s. At that time local chefs decided to experiment with fresh green chilies, instead of using the usual dried red ones, in making their curry paste. The green chilies had the effect of introducing a crisp green taste which quickly became a hit. Traditionally the colour of this dish is soft creamy green. Chefs today who desire a more vivid green will often mix in some chopped chili leaves.
